- Cookie dough, Start by combining 1/2 cup of butter and 1/3 cup of white sugar in a mixing bowl. Mix these together thoroughly. Add 1 egg and 1 teaspoon of vanilla extract to the bowl. Next, add 1 1/4 cups of flour and 1/2 teaspoon of baking soda. Fold these ingredients together until a dough forms. Pour in 250g of chocolate chips and fold them into the dough. Set this bowl aside while you prepare the brownie mixture.
- Make the brownie batter In a saucepan, melt 1 cup of butter over heat until it browns (brown butter). Add 60g of semi-sweet chocolate, 1/2 cup of cocoa powder, and 3 tablespoons of oil directly into the hot butter. Mix until smooth and glossy. In a separate large bowl, crack 3 eggs and add 1/2 cup of brown sugar. Mix these with a hand mixer until combined. Add 1 3/4 cups of powdered sugar to the egg mixture, then pour in the melted chocolate/butter mixture from your saucepan. Add 1/2 cup of flour and fold everything gently. Finally, fold in 3/4 cup of chocolate chips.
- Assembly, line a baking pan with parchment paper. Pour about half of the brownie batter into the pan to form the first layer. Using a scoop, place balls of the cookie dough into the brownie batter. Pour the remaining brownie batter over the top to cover the cookie dough balls. Finally, scoop the remaining cookie dough on top of the second layer of brownie batter.
- Bake at 350F for 25-35 minutes.
