Instructions
- Place tomatoes, tomato paste, parsley, garlic, oregano, salt, and pepper in a food processor; blend until smooth.

- Heat oil in a large skillet over medium heat. Add onion and cook until slightly softened, about 2 minutes.

Notes
If you don't have a blender uou could use an immersion blender if you have one, otherwise you could mash the chunks with a potato masher. You could also simmer the sauce for longer, which will help break down the tomatoes even more. Or better yet, just leave the sauce unblended for a nice, chunky texture!
